The Perfect Roast Potato
Ingredients
- 5kg of Agria potatoes
- olive oil
- 30g butter
- fresh rosemary
- fresh thyme
Method

Pre heat oven to 180 to 200 degrees C (fan bake)

Peel or scrub the potatoes, chop in halves.

Boil potatoes in a pot for 20-25 minutes, poking with a knife every now and again to test softness. Should be soft on the outside.

Pour oil in saucepan, 2-3mm thick across the bottom.

Add butter to the saucepan, heat butter and oil together over a medium heat.

Chop up rosemary and thyme and mix in with butter and oil. Cook for 3-4 minutes.

Drain potatoes, give them a good shake inside the pot. Put potatoes in pot back on heat for a minute, to dry out further.

Pour the oil, butter and herb mix over the postotes in a roasting dish, and place in the oven. Cook for an hour to an hour and 10 minutes.
